Josh’s Holiday Berry Sauce

  • 2lbs blackberries fresh or frozen
  • 1lb raspberries fresh or frozen
  • 1lb blueberries fresh or frozen
  • 1lb strawberries fresh sliced
  • 1 stick of butter
  • 1lb of honey
  • 1 cup of brandy

 

Combine ingredients in sauce pan over medium heat until the blackberries and raspberries have broken down. Cool to serving temperature. Serve over dry turkey, ice cream, shortcake, french toast, thicken with cream and drink it, trust me this shit is delicious!

James (our graphic designer and Lauren’s brother) Bacon Spinach Dip

  • 2 blocks of cream cheese
  • 1 pound of bacon
  • 1 container of frozen spinach, defrosted and drained (can also use fresh)
  • 1 cup Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp black pepper

Defrost spinach and drain. Set aside.
Fry up bacon until crispy then crumble
In an oven proof sauce pan, combine all ingredients except 1/2 c parm cheese
Once cream cheese is melted, and ingredients are mixed smooth top and sprinkle on the rest of the parm
Put under the broiler for 3-5 minutes, until top is brown and bubbly
Serve with everything.

Lauren’s Sweet Potato Casserole

  • 3 pounds sweet potatoes
  • 1/3 cup packed brown sugar (can do half Spenda brown sugar)
  • 2 tablespoons butter
  • 2 tablespoons orange juice concentrate
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground nutmeg
  • 2 large eggs
  • 1/4 cup chopped pecans

Preheat oven to 350°.

Pierce potatoes with a fork; arrange in a circle on paper towels in microwave oven. Microwave at HIGH 16 minutes or until tender, rearranging potatoes after 8 minutes. Let stand 5 minutes.

Cut each potato in half lengthwise; scoop out pulp into a large bowl. Discard skins. Add sugar and next 5 ingredients (sugar through nutmeg), and beat with a mixer at low speed until combined. Add eggs; beat until smooth.

Spoon mixture into a 1 1/2-quart baking dish; sprinkle with pecans. Bake at 350° for 45 minutes or until thoroughly heated.
